1 cup raw Pistachios, shelled
12 Medjool dates, pittet
1/4 cup shredded coconut
1 tbls coconut oil
*1 drop Doterra Lemon essential oil or a squeeze of fresh lemon juice
Place all the ingredients in a food processor and blend until finely chopped and blended. (approx. one minute)
Scoop out balls and roll between your hands until evenly sized balls.
Roll in chopped pistachios. Refrigerate for 15 mins and then enjoy
